Product description
First released in 1962, The Signature is Yalumba’s iconic Barossa blend of Cabernet Sauvignon and Shiraz, made only in standout vintages. The 2019 release comes from exceptional vineyard parcels across Barossa and Eden Valley, hand-harvested and fermented in a mix of stainless steel and oak. The wine is matured in a blend of French, Hungarian, and American oak hogsheads for 20 months. Each release is dedicated to a ‘signatory’—a member of the Yalumba family past or present who has made a lasting impact on the estate.
Bouquet Intense and layered, with aromas of blackberry, blackcurrant, and plum. Hints of dark chocolate, cedar, crushed herbs, and warm spice add depth and elegance.
Palate Full-bodied and richly textured. The Cabernet brings structure, cassis, and graphite, while Shiraz adds plush dark fruit and spice. Fine-grained tannins and fresh acidity support a long, balanced finish with notes of mocha, clove, and dried thyme.
Food Pairing Ideal with roast lamb, grilled ribeye, venison, or chargrilled eggplant. Also excellent with aged cheddar or a rich mushroom and lentil stew.
Cellaring Drink now or cellar confidently through 2039. The wine’s structure and balance promise graceful evolution over time.
