Wooing Tree Pinot Noir 2019 is crafted from hand-picked fruit grown in the heart of Cromwell, Central Otago. The wine undergoes a gentle fermentation process with cold soaking, hand plunging, and 9 percent whole bunch inclusion. It is then matured in French oak for nine months, enhancing its elegance and structure while highlighting the region’s distinctive fruit purity.
Bouquet The bouquet is perfumed and expressive, offering lifted aromas of dark cherry, black plum, violets and subtle spice.
Palate On the palate, this Pinot is rich and smooth, revealing layers of ripe cherry, red berry and a hint of chocolate. Fine tannins frame a long, silky finish with excellent balance and focus.
Food Pairing This wine is an ideal partner for game meats such as venison or duck, mushroom risotto, or truffle-infused dishes. Its savoury depth complements both earthy and rich flavours.
