Winemaking Les Preuses is one of Chablis’ most celebrated Grand Cru vineyards, and in the hands of William Fèvre, it becomes a study in grace and mineral tension. Fruit is hand-harvested from old vines grown on Kimmeridgian limestone soils, then fermented in a mix of stainless steel and seasoned oak. Ageing on fine lees for over a year lends the wine exceptional texture and aromatic complexity, while preserving its signature freshness.
Bouquet Highly refined and aromatic, the bouquet reveals layers of white flowers, citrus zest, green apple, and crushed shell, with an undercurrent of smoky flint and a faint whisper of almond. Ethereal yet precise.
Palate Sleek and crystalline on the entry, with a tightly coiled core of lemon curd, grapefruit, and stone fruit. A mineral backbone drives the wine through a long, elegant finish tinged with saline and chalk. The oak is beautifully discreet, allowing the purity of the vineyard to shine. Food Pairing Pair with fine seafood like lobster tail, pan-seared scallops or John Dory in a beurre blanc sauce. Also exceptional with creamy chèvre, white asparagus, or chicken in a light tarragon cream.
Cellaring Beautifully expressive now with aeration, this wine will develop further complexity with time. Best enjoyed from 2025–2035, or longer under ideal cellaring conditions.
Interesting Fact The name Les Preuses is believed to derive from the word puiser (to draw water), referencing an ancient Roman spring near the vineyard site—an area revered for its purity long before wine was made there.
