This exceptional Grand Cru is sourced from the steepest, most prized parcel of the Bougros vineyard known as Côte de Bouguerots, where old vines dig deep into the Kimmeridgian limestone slopes that overlook the Serein River. Harvested by hand, the wine is partially vinified in used French oak for depth and structure, then aged on lees to enhance complexity without losing its Chablisienne tension.
Bouquet: Lifted aromas of lemon oil, white peach and fresh-cut pear are layered with subtle toasted hazelnut, wet stone and a whisper of brioche. A saline breeze weaves through the bouquet, evoking the cool riverbank soils of its origin.
Palate: Concentrated and commanding, this Grand Cru shows impressive depth balanced by shimmering acidity. Citrus, quince and orchard fruit unfold across a chalky, mineral-laced backbone, finishing with notes of grilled lemon, crushed rock and a whisper of spice. Long, poised and powerful.
Food Pairing: Perfect with lobster, scampi or rich fish dishes such as miso-glazed cod or salmon with beurre blanc. Also stunning with aged Comté or truffle risotto for an indulgent winter pairing.
Cellaring: Drinking beautifully now but will evolve gracefully through to 2035, gaining more nutty, honeyed depth with time.
Interesting Fact: Côte de Bouguerots is considered the jewel of the Bougros Grand Cru vineyard, thanks to its dramatic slope, direct southern exposure and proximity to the river, which creates a unique microclimate for producing some of the most age-worthy and mineral-driven Chablis in the region.
