Winemaking Crafted from a steep, south-facing slope at the foot of the Bougros Grand Cru vineyard, this wine is a masterclass in precision and depth. Fermentation is carried out in a combination of stainless steel and seasoned oak barrels, allowing the wine to retain its intense minerality while developing complexity. Extended ageing on fine lees builds texture and harmony, creating a Chablis of immense stature and elegance.
Bouquet The nose opens with electric intensity—lime blossom, oyster shell, crushed stone, and white peach, underpinned by subtle hints of hazelnut and gunflint. Profoundly pure and evocative of its limestone-rich terroir.
Palate A strikingly powerful Chablis, with a layered palate of ripe citrus, stone fruit and saline minerality. The oak is beautifully integrated, offering delicate support to the wine’s steely spine. Textural, long and complex, this wine glides with precision and closes on a note of chalky tension and citrus zest. Built for ageing, but a sensory delight even in its youth.
Food Pairing Sublime with fresh oysters, scallops in beurre blanc, or grilled crayfish. Also exceptional alongside white truffle risotto or a creamy chicken velouté. Serve lightly chilled to appreciate its full structure and elegance.
