Waiheke Whisky “Fairlight” is a New Zealand single malt whisky handcrafted on Waiheke Island and aged in a combination of ex-bourbon and French oak red wine casks. Named after the beach just below the distillery, this expression is a true reflection of Waiheke’s maritime climate and artisan approach. It’s non-chill filtered, naturally coloured, and distilled in small batches using local spring water and carefully selected malted barley.
Bouquet Lifted aromas of baked stone fruit, toasted oak, vanilla bean and soft campfire smoke. Hints of dark berry, spice and coastal air give it a distinctive island personality.
Palate Smooth and rounded. Notes of caramelised peach, dried cherry, nutmeg and honeyed malt unfold over a creamy oak base. There’s a gentle coastal salinity and touch of smoke that add savoury depth, leading to a long, slightly drying finish with spice and char.
Food Pairing Enjoy neat or with a splash of water to reveal its full complexity. Pairs beautifully with cured meats, hard cheeses, roast pork or dark chocolate with sea salt.
Cellaring Ready to enjoy now but will evolve gracefully in bottle over the next 5–10 years. Once opened, enjoy within 2–3 years and store upright in a cool, dark place.
