Winemaking Vasse Felix Premier Cabernet Sauvignon represents the pinnacle of the estate’s Cabernet production. Sourced from Wilyabrup’s best vineyard blocks and fermented with wild yeasts, the wine is matured in French oak barriques for 18 months. It’s an expression of meticulous vineyard selection, classic structure, and understated power.
Bouquet Highly aromatic with notes of blackcurrant, crushed violets, and red plum. Subtle layers of graphite, cedar, bay leaf, and cigar box lend a Bordeaux-like complexity.
Palate Medium to full-bodied with precise, fine tannins and a vibrant acid line. Flavours of dark cherry, cassis, cocoa and savoury herbs evolve into a long, mineral finish. Elegant and structured, with great purity and restraint.
Food Pairing Ideal with venison, roasted lamb, beef fillet, or truffle-infused dishes. Also excellent with hard cheeses and dishes with earthy components like mushroom or beetroot.
Cellaring A wine built to age gracefully over 15–20 years. Decanting is recommended when young to reveal its full aromatic and textural detail.
Interesting Fact Vasse Felix, established in 1967, is Margaret River’s founding wine estate. The Premier Cabernet is considered one of the region’s benchmark reds, consistently reflecting Wilyabrup’s gravelly soils and maritime influence in every vintage.
