Winemaking This Chardonnay is grown entirely in the renowned Gimblett Gravels subregion of Hawke’s Bay, where free-draining soils and warm days produce concentrated, structured fruit. The 2022 vintage was hand-harvested and whole-bunch pressed before fermentation in French oak barriques (30% new). Wild yeasts and full malolactic fermentation bring complexity, while 10 months' ageing on lees with gentle bâtonnage gives the wine depth and finesse.
(Bâtonnage is a process specific to Chardonnay that allows a winemaker to displace the expired yeast cells at the bottom of a barrel throughout the wine barrel through gentle agitation)
The nose is elegant and layered, with aromas of lemon curd, ripe nectarine and white florals. Subtle hints of flint, hazelnut and fine oak add complexity without overwhelming the purity of fruit.
Palate Inviting and finely textured, the palate shows juicy citrus and stone fruit, wrapped in creamy lees-derived weight. A mineral backbone and bright acidity bring focus, leading to a long, balanced finish with a touch of spicy oak. Fresh yet structured, this Chardonnay is a refined expression of Hawke’s Bay terroir.
Food Pairing Pair with roast chicken, creamy pasta with prawns, or grilled fish with lemon and capers. Also works well with mushroom risotto or soft cheeses like brie or camembert.
