Product description
Winemaking Grown on the ancient clay-rich soils of Upper Moutere, this single-vineyard Pinot Noir reflects the unique terroir of Tohu’s Whenua Matua vineyard. Hand-harvested fruit was gently destemmed and fermented in open-top fermenters with hand plunging for gentle extraction. The wine was then matured in French oak barriques (30% new) for 11 months before bottling without fining. The result is a site-driven Pinot that balances finesse with grounded intensity.
Bouquet Lifted aromas of dark cherry, wild strawberry, and redcurrant are layered with baking spice, dried herbs, forest floor, and a gentle lick of toasty oak.
Palate Silky and medium-bodied, with elegant tannins and bright acidity. Red fruit flavours flow through a savoury, earthy core, with spice and mineral tension carrying the finish long and smooth.
Food Pairing A beautiful match for duck, game meats, roasted mushroom dishes, or herb-crusted lamb. Equally lovely with beetroot salad or a simple charcuterie board.
Cellaring Drinking beautifully now with decanting, but will reward careful cellaring over the next 6–8 years.
