From the ruggedly beautiful Terra Sancta estate on Felton Road, this Pinot Gris is grown in loamy, mineral-rich soils with excellent natural drainage. The fruit is hand-picked and fermented with a mix of indigenous and selected yeasts, primarily in stainless steel, with a small portion aged on lees for added weight and mouthfeel. The wine is crafted in a dry, textural style, showcasing the energy and precision of Bannockburn’s cool climate.
Bouquet
Aromatic and vibrant, the nose bursts with pear, quince, and nectarine, wrapped in layers of citrus blossom, honeysuckle, and subtle spice. A flinty edge and faint wild herb note reflect the wine’s alpine origins.
Palate
Dry and elegant, with beautifully balanced fruit and acidity. Juicy pear, stone fruit, and a touch of mandarin peel glide across a soft, textural mid-palate. Bright acidity carries through to a clean, mineral finish with delicate spice and savoury detail. Precise and quietly powerful.

Perfect with grilled seafood, lemon and thyme chicken, or roasted vegetable and feta tart. Also pairs well with fresh pasta dishes or mild, creamy curries.
Cellaring
