Dehesa Gago is Telmo Rodríguez’s honest expression of Toro, made entirely from Tinta de Toro, the local name for Tempranillo. The grapes come from high-altitude, bush-trained vines grown without irrigation by small local growers. Fermentation takes place in stainless steel with indigenous yeasts, and the wine is matured without oak to preserve freshness and purity. It’s a modern, hands-off approach that reflects place over polish.
Bouquet The nose is bright and expressive, with ripe blackberries, blueberries and a touch of wild herbs. Hints of crushed violets, liquorice and warm earth bring depth, giving a nod to the arid, rugged landscape of Toro.
Palate Vibrant and medium-bodied, the palate brims with juicy dark fruits, fresh acidity and supple tannins. There’s no oak influence, allowing the bold purity of the fruit to shine. A gentle grip carries through to a spicy, mineral-laced finish that keeps things clean and savoury. It’s approachable, energetic and beautifully balanced.
Food Pairing Dehesa Gago is a versatile red for all seasons. Pair with grilled lamb, spiced sausages or a hearty lentil stew. Tapas, roasted aubergine or Manchego cheese also make ideal matches.
Cellaring Drink now for its freshness or hold for up to 5 years to enjoy added savoury complexity.
Interesting Fact Telmo Rodríguez is one of Spain’s most respected winemakers, known for reviving forgotten vineyards and championing native grape varieties. Dehesa Gago is his love letter to Toro – a region he believes deserves greater attention for its potential to produce fine, expressive reds.
