Winemaking Crafted by Takahiro Koyama, this Pinot Noir is sourced from two organically farmed vineyards on the eastern side of the Waipara Valley, including the renowned Bedford Vineyard. The grapes were wild-fermented in open-top fermenters with a mix of pump-overs and plunging for soft tannin extraction. The wine matured for 10 months in old French oak barrels before settling in tank prior to bottling. It is unfined and unfiltered, preserving its natural character and complexity.
