Côte des Blancs & Montagne de Reims, Champagne, France
Winemaking
Produced only in outstanding vintages, Comtes de Champagne Rosé 2007 is a prestige cuvée that captures the elegance and structure of Taittinger’s finest Grand Cru vineyards. The blend combines 70% Pinot Noir (including 15% still red wine from Bouzy) and 30% Chardonnay, all from Grand Cru villages. Fermented in stainless steel to preserve freshness and aged for over 10 years on lees, the 2007 vintage offers superb maturity and graceful complexity. Dosage: approx. 9 g/L.
Bouquet
Refined and captivating, the nose reveals wild strawberry, red cherry, and blood orange, underscored by hints of rose petal, dried herbs, and delicate patisserie. Gentle evolution adds layers of spice, toasted almond, and chalky minerality. It’s elegant, expressive, and quietly powerful.
Palate
Silky and structured, with a beautifully integrated mousse and fresh acidity that drives the wine’s red fruit core. Raspberry and pink grapefruit mingle with subtle notes of crushed hazelnut, white pepper, and a fine saline edge. The finish is long, dry, and harmonious—poised between generosity and precision.
Food Pairing
Perfect with duck breast, tuna tataki, or mushroom risotto with parmesan. For a luxurious pairing, try with truffled poultry or roast lamb with pomegranate glaze. This is a vintage rosé Champagne of depth, complexity, and extraordinary finesse.
