Distillation & Maturation Starward Octave Barrels is an Australian single malt whisky fully matured in Yalumba’s The Octavius Shiraz octave barrels—small, highly active casks that impart deep character and bold red wine influence. Distilled in Melbourne’s wildly shifting climate and bottled at 48%, this limited release is non-chill filtered and bursting with fruit, spice and oak-driven complexity.
Nose Lush and aromatic with notes of black cherry, stewed plum, red liquorice and baking spice. Hints of dark chocolate, cedar and ripe fig create a deep, wine-soaked bouquet.
Palate Full and mouth-coating, the palate delivers rich flavours of dark berry compote, spiced oak, cocoa and vanilla. Tannins from the Shiraz cask lend structure, while a silky malt sweetness keeps it balanced. Long, warming finish with jammy fruit, toasted spice and wine-kissed depth.
Food Pairing Ideal with grilled lamb, dark chocolate torte or aged cheddar. Also excellent with berry desserts or sticky glazed meats.
Cellaring Drinking beautifully now, though it will evolve and mellow with time after opening. A limited release worth savouring.
Interesting Fact The “Octave” barrels used for this whisky are just 100 litres in size—about one-third the size of standard wine casks—allowing for greater oak interaction and a turbocharged flavour profile unique to Starward.
