Hand-harvested from the Spiegel Grand Cru vineyard in Alsace, this Pinot Gris was whole-bunch pressed and fermented in temperature-controlled tuns. The wine was aged on lees for eight months, enhancing its complexity and texture.
Bouquet The nose is expressive, with aromas of ripe pear, honey, and a hint of smokiness, characteristic of the Spiegel terroir.
Palate The palate is rich and full-bodied, with flavors of Mirabelle plum, quince, and sweet almond. A subtle smokiness adds depth, balanced by refreshing acidity that leads to a dry, crisp finish.
Food Pairing Pairs beautifully with dishes such as roast pork with apricot glaze, duck confit, or a creamy blue cheese like Roquefort.
