Grown on the Quartz Reef Bendigo Estate, this Pinot Gris reflects the unique mineral intensity of its namesake soils. The vineyard is farmed biodynamically, with a strong commitment to organic and regenerative practices. Hand-harvested fruit is whole-bunch pressed and fermented with indigenous yeasts in a mix of stainless steel and old oak, followed by extended lees contact to enhance texture and complexity. The wine is dry in style, with precision and tension at its core.
Bouquet
Elegant and pure, the nose opens with nashi pear, baked quince, and white peach, layered with citrus blossom, fresh ginger, and a hint of almond. Beneath it all lies a fine mineral thread—subtle, savoury, and distinctive.
Palate
Dry, finely textured, and beautifully poised. The palate offers stone fruit and ripe pear, supported by soft spice and creamy lees weight. Bright acidity and a long, mineral finish give the wine structure and energy. A Pinot Gris of restraint, detail, and quiet confidence.
Food Pairing
A natural match for grilled chicken with sage, miso-glazed aubergine, or roast pork with apple and fennel. Also excellent with aged soft cheeses or seafood in light, creamy sauces.
Cellaring
Drinking beautifully now for its clarity and texture, but can cellar for 5–6 years, developing greater depth, spice, and savoury complexity while maintaining its mineral backbone.
