Fermented with wild yeasts and partially matured in neutral oak, this is a natural-leaning style that focuses on texture, minerality and aromatic depth. Extended time on lees and minimal intervention enhance the wine’s complexity while maintaining freshness and vibrancy.

Bouquet
Intriguing and expressive with aromas of lime leaf, elderflower and green apple. Hints of lemon balm, flint and wild herbs add savoury lift.

Palate
Dry and layered with bright acidity and a gentle chalky texture. Citrus and white stone fruit flavours mingle with fresh herbs and saline minerality. A long, focused finish delivers both freshness and structure.

Food Pairing
