Winemaking This limited-release Chardonnay is the result of a unique collaboration between Prophet’s Rock winemaker Paul Pujol and legendary Burgundy vigneron François Millet (formerly of Domaine Comte Georges de Vogüé). Sourced from the steep schist slopes of the Bendigo subregion in Central Otago, the fruit was hand-picked, whole-bunch pressed, and fermented with indigenous yeasts in seasoned French oak barrels. The wine was aged on full lees for 18 months without racking or stirring, in true Burgundian fashion. Bottled unfined and unfiltered to preserve its full character and energy.
Bouquet The nose is delicate yet complex, opening with lemon zest, white peach and green apple. Subtle notes of chalk, flint, and hazelnut emerge with air, alongside a quiet floral lift—refined, poised and deeply mineral.
Palate Elegant and quietly powerful, the palate reveals layers of citrus, pear and almond cream, wrapped in a fine mineral thread. The texture is silky and seamless, balanced by bright acidity and gentle savoury grip. The finish is long and pure, echoing with saline minerality and understated oak. This is a wine of precision and grace—more whisper than roar—but captivating in its detail.
Food Pairing Pair with oysters, scallops, or grilled white fish with beurre blanc. Also exquisite with chicken in a light cream sauce, soft goat cheese, or saffron risotto.
Cellaring Beautiful now but built to age. Best enjoyed 2024–2034 as it gains further complexity and Burgundian depth.
Interesting Fact The name “Cuvée aux Antipodes” nods to the wine’s transcontinental roots—a Southern Hemisphere wine crafted in the image of fine white Burgundy, by a Burgundian master and a Central Otago pioneer.
