Each bottle undergoes 12 months of aging on its lees in a horizontal position. The Champagne then ages an additional three years on its lees, enhancing texture, body, and finesse while softening the heavier characteristics from extended lees aging. Large producers, with their tens of millions of bottles, can't afford to make Champagne in this meticulous way.
The house produces a Rosé only in years when the quality of black grapes is exceptional. This wine is a blend of their Extra Quality Brut house Champagne and red wine Champagne aged in oak casks, allowing for precise control over the color. The blend consists of 37% Pinot Noir, 13% Pinot Meunier, and 50% Chardonnay, with color coming from 10% still Avenay Pinot Noir aged in oak.
