Winemaking
Bin 707 is Penfolds’ flagship Cabernet Sauvignon, made in the same powerful, oak-driven style as Grange. Sourced from the best Cabernet parcels across South Australia, including Coonawarra, Barossa, and Wrattonbully, the wine is matured for 16 months in 100% new American oak hogsheads. The 2021 vintage is layered, structured, and destined for long-term cellaring.

Bouquet
Intensely aromatic with cassis, dark plum, and black cherry. Notes of vanilla, cedar, sandalwood, and pencil shavings build aromatic richness and depth.

Palate
Full-bodied and commanding, with concentrated black fruit, toasty oak, and ripe, chewy tannins. Flavours of blackberry, liquorice, dark chocolate, and graphite unfold in firm, savoury layers. The finish is immense, dry, and lingering with fine-grained grip and extraordinary length.

Food Pairing
Best matched with chargrilled steak, roast venison, braised short ribs, or truffle-seasoned dishes. A wine for slow, contemplative dining and rich protein-driven fare.

Cellaring
Built for the long haul. Bin 707 2021 will reward 20–30+ years in the cellar. Decant generously if drinking young to allow the wine’s power and complexity to reveal itself.
