Pegasus Bay Vergence Mk3 is an adventurous white from Waipara in North Canterbury, made outside traditional varietal boundaries. It brings together a blend of Alsatian-inspired aromatic whites including Gewürztraminer, Riesling and Pinot Gris. Fermented with wild yeasts in seasoned oak puncheons and matured on full lees for 18 months, it is bottled unfined and unfiltered to preserve its raw character and complexity.
Bouquet Aromatic and expressive with notes of white peach, jasmine, lychee and honeycomb. Herbal undertones and delicate spice give lift and intrigue.
Palate Dry and textured, with flavours of stone fruit, chamomile tea, grapefruit zest and ginger. Wild fermentation and extended lees ageing create a creamy mouthfeel with savoury depth. The finish is long, floral and gently grippy.
Food Pairing Excellent with spiced Asian dishes, duck pancakes, grilled halloumi, or tagines. This is a wine for the curious, ideal with creative cuisine.
