Pegasus Bay Finale 2019 is an opulent dessert wine made from late-harvest Sauvignon Blanc and Sémillon, both affected by botrytis cinerea—the noble rot. Grown in Waipara, North Canterbury, the grapes are hand-picked berry by berry at peak concentration. Fermentation is long and slow in new French oak barriques, followed by extended ageing on lees. The result is an intense, richly layered sweet wine in the style of Sauternes, yet distinctly New Zealand in its brightness and energy.
Bouquet Lusciously aromatic with notes of apricot, mango, honeycomb, and orange blossom. Hints of vanilla, cinnamon, and toasted brioche rise from the glass.
Palate Unctuous yet finely balanced, with vibrant acidity lifting flavours of dried tropical fruit, marmalade, and almond toffee. Creamy and complex with a long, spicy finish that lingers beautifully.
Food Pairing Perfect with blue cheese, crème brûlée, tarte tatin, or fresh stone fruit desserts. Also excellent with pâté or poured over poached pears for a decadent twist.
