Pegasus Bay Encore Noble Riesling 2017 is a limited-release dessert wine made only in exceptional vintages. The grapes, grown in Waipara’s free-draining, north-facing terraces, are left on the vine to naturally develop botrytis cinerea, or noble rot. Individual berries are hand-picked at high concentration, then slowly fermented at low temperatures to preserve aromatics. The wine is aged in tank to maintain freshness and clarity, delivering both intensity and elegance.
Bouquet Aromatic and concentrated, with notes of orange marmalade, dried apricot, honeycomb and jasmine. A hint of ginger and lanolin adds intrigue and complexity.
Palate Lusciously sweet yet beautifully balanced. Flavours of citrus peel, golden sultana, poached pear and quince unfold over a silky texture. Bright acidity cuts through the richness, giving length and energy to the lingering, honeyed finish.
