Winemaking Pegasus Bay Bel Canto 2023 is produced from ultra-ripe, estate-grown Riesling in North Canterbury’s Waipara Valley. Some botrytis is encouraged to develop flavour intensity, then the fruit is hand-harvested and fermented slowly at cool temperatures to dryness. A small amount of skin contact and time on lees adds weight and complexity. It’s a dry Riesling with exceptional concentration, purity and structure—crafted for longevity.
Bouquet Fragrant and intense, with aromas of orange blossom, lime, apricot and beeswax. Notes of wild honey, ginger and mineral flint rise from the glass with incredible depth.
Palate Textural and powerful, the palate delivers layers of ripe citrus, stone fruit, and subtle spice. A chalky minerality adds grip and definition, while zesty acidity drives the long, dry finish. Complex, savoury and beautifully balanced.
