The Paritua 21.12 Cabernet Merlot 2021 is crafted from a blend of handpicked Cabernet Sauvignon and Merlot, grown on the renowned Paritua Estate in Hawke's Bay. After careful harvesting, the fruit undergoes a cold soak followed by fermentation in open-top fermenters to maximise colour and flavour extraction. The wine is aged for 18 months in a combination of French oak barrels, with a percentage of new oak, to enhance its complexity and structure. This wine is bottled unfined and unfiltered to preserve its pure expression.
Bouquet The nose is inviting, with aromas of ripe blackcurrant, plum and black cherry, complemented by subtle notes of dried herbs, spice and a hint of vanilla from the oak maturation.
Palate On the palate, the wine is full-bodied with velvety tannins and rich layers of dark fruit, spice and cedar. A well-balanced acidity provides freshness, while the oak adds depth and complexity. The finish is long and lingering, with a touch of earthy minerality.
Food Pairing This elegant red blend pairs wonderfully with grilled steaks, lamb rack, or hearty dishes like beef Wellington. It also complements mature cheeses such as cheddar or gouda.
Cellaring While drinking beautifully now, this wine will continue to evolve over the next decade, reaching its peak between 2026 and 2031.
