Sourced from Palliser’s certified organic vineyards in Martinborough, the 2024 Sauvignon Blanc is crafted with a focus on precision and vibrancy. The fruit was hand-picked in cool morning conditions, gently pressed and fermented at low temperatures in stainless steel to preserve aromatic intensity. A short time on lees adds subtle weight and roundness, enhancing the wine’s mineral core and varietal purity.
Bouquet Bright and lifted with notes of grapefruit, lime zest and passionfruit. Hints of elderflower, green apple and flint give aromatic finesse and freshness.
Palate Dry and zesty with crisp acidity and a long, clean finish. Flavours of citrus, gooseberry and white peach flow over a fine, mineral palate with subtle herbal lift.
Food Pairing Ideal with oysters, goat’s cheese, grilled courgette or fresh seafood. Also excellent with Asian salads, green vegetables or summer picnic fare.
