Palliser Estate’s Pinot Gris 2024 is a beautifully expressive wine shaped by the cool-climate precision of Martinborough’s famed terrace soils. Hand-harvested fruit is gently pressed and fermented in a combination of stainless steel and seasoned oak barrels, with a portion undergoing wild ferment. Lees ageing adds savoury depth and texture, while the style remains firmly dry and food-focused—elegant, layered, and true to place.
Bouquet
Fragrant and sophisticated, the bouquet offers nashi pear, baked apple, and jasmine, underpinned by hints of ginger, citrus peel, and a touch of almond. A whisper of white pepper and wet stone brings lift and detail.
Palate
Refined and textural, with a dry backbone and a silky mid-palate. Pear, apricot, and soft spice unfold over a creamy lees texture, balanced by crisp acidity and a long, mineral finish. A Pinot Gris with finesse and quiet intensity.
Food Pairing

Cellaring
