Winemaking The 2023 vintage of Palliser Estate Chardonnay is a pure expression of Martinborough terroir. Organically grown fruit is hand-picked from Palliser’s home vineyards, then whole-bunch pressed and fermented with indigenous yeasts in French oak barriques (30% new). Full malolactic fermentation is completed for richness, while 10 months’ ageing on lees with bâtonnage (Bâtonnage is a process specific to Chardonnay that allows a winemaker to displace the expired yeast cells at the bottom of a barrel throughout the wine barrel through gentle agitation) brings texture, balance and harmony.
Bouquet The nose is vibrant and refined, with aromas of lemon curd, white peach and crisp apple. Subtle notes of almond, toast, and struck flint add savoury depth, while delicate florals bring lift and brightness.
Palate Fresh and inviting, the palate shows juicy citrus and stone fruit layered with creamy oak and fine minerality. The wine is textural and balanced, offering a smooth mouthfeel and lively acidity that gives length and elegance. A graceful Chardonnay that’s both vibrant and satisfying.
Food Pairing Pair with lemon roast chicken, crayfish with garlic butter, or goat cheese and leek tart. Also excellent with creamy seafood pasta or grilled halloumi with courgette ribbons.
Cellaring Enjoy now for its youthful energy or cellar through 2031 to allow more savoury notes and texture to emerge with age.
