Crafted from carefully selected parcels of Marlborough-grown Pinot Gris, Nautilus 2024 was fermented using a mix of stainless steel and old oak barrels. Wild yeasts were used in part to build complexity, and a short period of lees ageing followed fermentation to enhance texture and depth. The result is a sophisticated, dry Pinot Gris with purity, weight and subtle spice.
Bouquet Elegant and aromatic with notes of ripe pear, quince and white blossom. Subtle hints of honeysuckle, cinnamon and baked apple add warmth and charm.
Palate Dry and textural with a silky mouthfeel and bright acidity. Flavours of nashi pear, citrus and almond unfold over a gently spiced mid-palate, leading to a long, mineral finish.
Food Pairing Ideal with pork belly, creamy chicken dishes, grilled salmon or mildly spiced Asian cuisine. Also pairs beautifully with soft cheeses and root vegetable gratin.
