Hand-harvested fruit is fermented with wild yeasts and matured in French oak, creating a wine that balances concentrated fruit, savoury complexity, and a silken texture. Bouquet Complex and inviting with aromas of dark cherry, black plum, wild thyme, and hints of spice and earthy minerality.
Palate Silky and rich with layers of red and dark berry fruits, fine savoury tannins, and bright acidity. A powerful yet elegant palate leads into a long, textured finish with subtle oak spice and herbal lift.
Food Pairing Perfect with roast lamb, venison, mushroom risotto, or duck confit. Also excellent with aged cheeses and hearty autumn dishes.
Cellaring Drinking beautifully now but will evolve with grace through to 2032. Decanting recommended for early drinking to fully open up its aromatics.
