Winemaking From the Ribbon Vale Vineyard in Wilyabrup, this Cabernet Sauvignon is grown, vinified, and bottled on the Moss Wood estate. The 2021 vintage was fermented in small open tanks, hand-plunged, and matured in French oak barriques for 18 months. The result is a pure and detailed expression of Margaret River Cabernet with fine structure and classic varietal intensity.
Bouquet Lifted and elegant with aromas of blackcurrant, dark cherry, and mulberry. Layers of bay leaf, pencil shavings, cedar, and dark chocolate add complexity and regional character.
Palate Medium to full-bodied with ripe dark fruit, supple tannins, and a line of bright acidity. Notes of cassis, graphite, and savoury spice unfold on the palate, finishing long, poised, and beautifully balanced.
Food Pairing Best enjoyed with roast lamb, beef Wellington, wild mushrooms, or hard aged cheeses. A natural match for elegant red meats and rich, earthy flavours.
Cellaring This wine will reward 10–15 years of careful cellaring. Decanting is recommended in its youth to unlock its aromatic layers.
