Named for its theatrical roots—The Dress Circle being the premium seating section in an opera house—this wine reflects elegance, balance, and poise. Grown on steep, north-facing terraces in Bendigo, one of Central Otago’s warmest sub-regions, the fruit is hand-picked and gently whole bunch pressed. Fermentation takes place in stainless steel and old French oak barrels, with extended lees contact for texture. The result is a dry, Alsace-inspired style with rich aromatics and graceful structure.
Bouquet
Beautifully perfumed, the nose offers ripe pear, baked apple, and quince, alongside delicate floral notes of honeysuckle and acacia. Hints of cinnamon, nutmeg, and crushed almond add warmth and intrigue.
Palate
Silky and finely balanced, the palate delivers a generous wash of stone fruit and citrus, layered with ginger spice and creamy lees texture. A fresh line of acidity and mineral length give the wine its elegance and drive. Dry, yet opulent and quietly complex.
Food Pairing
Pair with chicken in white wine sauce, spiced duck breast, or a pear and blue cheese tart. Also excellent with mildly spiced curries or roasted root vegetables.
Cellaring
Delicious now for its vibrant fruit and freshness, but can cellar confidently for 5–7 years, evolving into a richer, more honeyed and savoury style with added depth and finesse.
