This exceptional Chablis comes from the northern part of Burgundy, near the town of Auxerre, within the renowned Chablis appellation. The vines, planted on gentle slopes with varied exposures, thrive in a mosaic of terroirs, creating a wine of great complexity. The region's rich history dates back to the Cistercian monks of the Pontigny Abbey, who first planted vines here.

Vinification & Ageing
Fermentation takes place in thermoregulated stainless steel vats, preserving the purity of the fruit. The wine undergoes 9 to 10 months of ageing on fine lees in stainless steel vats, enhancing its texture and complexity.

Tasting Notes
The nose is exceptionally fresh, with vibrant lemon notes complemented by a subtle hint of minerality. On the palate, the wine is bold and chiselled, with a harmonious balance of flavour. The finish is long, mineral, and elegant, a signature trait of the Chablis terroir.
