Winemaking Maison Albert Bichot has long been celebrated for its elegant, terroir-driven Burgundy. This Chablis is made from 100% Chardonnay grown on the region’s iconic Kimmeridgian limestone soils. The grapes are gently pressed and fermented at cool temperatures in stainless steel tanks to retain purity and freshness. Ageing on fine lees adds texture and subtle depth while preserving the bright, mineral character that defines classic Chablis.
Bouquet The nose is fresh and lifted, showing citrus blossom, green apple, lemon peel and white flowers. Hints of crushed oyster shell and chalk add a clean mineral edge, balanced by a touch of soft almond and wet stone.
Palate Bright and inviting from the first sip, the palate offers juicy citrus, crisp green apple and a whisper of white peach. A gentle mineral tension runs beneath, giving structure and length. The finish is fresh and zesty, with lovely balance and a mouth-watering saline note that lingers. Elegant, expressive and incredibly easy to enjoy.
Food Pairing A classic match for oysters, prawns or pan-fried fish with lemon butter. Also ideal with goat cheese salad, steamed mussels, or sushi. Serve lightly chilled to let the freshness and minerality shine.
Cellaring Delicious now but will gain complexity with short-term cellaring. Enjoy through 2027 for added savoury depth and roundness.
