Winemaking The “Alchemy” Chardonnay represents the pinnacle of Mahi’s winemaking, crafted from select hillside vineyards in Marlborough. The 2021 vintage was hand-picked and whole-bunch pressed, with fermentation carried out using wild yeasts in seasoned French oak barriques. The wine underwent full malolactic fermentation and aged on lees for 11 months with no fining or filtration. The result is a wine of purity, structure and layered complexity.
Bouquet The nose is refined and complex, with aromas of lemon peel, white peach and ripe apple. Hints of struck flint, cashew, and savoury lees characters add detail and lift, giving it a quietly powerful aromatic presence.
Palate Inviting and well-balanced, the palate delivers juicy stone fruit, citrus zest and creamy almond notes. A mineral thread and fine acidity bring freshness and precision. Smooth, layered and long on the finish, this Chardonnay offers texture and tension in perfect harmony.
Food Pairing Excellent with roast chicken, miso-glazed salmon, or a goat cheese tart. Also pairs well with mushroom risotto, grilled vegetables or creamy pasta with lemon and herbs.
Cellaring Approachable now, but will continue to evolve through 2030. With age, it will gain more savoury depth and complexity.
