Lustau San Emilio Pedro Ximénez is a luxurious sweet sherry made from sun-dried Pedro Ximénez grapes, picked at full ripeness and dried on mats to concentrate sugars. Once pressed, the must is fortified and aged using the traditional solera system in Jerez, in old American oak barrels. The result is a deeply concentrated wine with unctuous sweetness, aromatic intensity, and classic PX richness.
Bouquet Heady and expressive with aromas of dried figs, raisin, toffee, and dark chocolate. Notes of caramel, coffee, and sweet spice rise from the glass with warmth.
Palate Velvety and opulent with intense flavours of date syrup, sultana, molasses, and candied orange peel. Silky in texture with lingering sweetness balanced by soft acidity and rancio complexity on the finish.
Food Pairing Ideal with blue cheese, dark chocolate, sticky toffee pudding or poured over vanilla ice cream. Also lovely as an after-dinner sipper on its own.
Cellaring Fully mature on release. Once opened, it will keep for several months if sealed and stored in a cool place. Serve slightly chilled.
