Product description
This exceptional Palo Cortado de Jerez is produced by Lustau under the guidance of the renowned Almacenista, Cayetano del Pino. The wine is crafted from Palomino grapes grown in the vineyards of Jerez and undergoes a complex aging process in the solera system. It is a unique style that transitions from biological ageing under flor to oxidative ageing, creating the deep, complex profile typical of Palo Cortado.
Bouquet: On the nose, this Palo Cortado reveals a rich blend of nutty aromas, including almonds, walnuts, and hazelnuts, balanced with subtle notes of dried fruit like figs and raisins. Hints of toffee, toasted wood, and a touch of spice add further depth to the bouquet, showcasing its intricate aging process.
Palate: The palate is elegant and full-bodied, offering a complex layering of dried fruits, nuts, and roasted coffee beans. There is a slight sweetness on the mid-palate, balanced by a refreshing acidity that cuts through the richness, leaving a well-rounded mouthfeel. The finish is long and dry, with lingering notes of nuts, oak, and a hint of saline minerality.
Food Pairing: Lustau Palo Cortado de Jerez Alm. Cayetano del Pino 1/22 NV is a versatile wine that pairs wonderfully with rich, savoury foods. Try it with aged cheeses such as Manchego or Comté, or with tapas like chorizo, jamón, or grilled sardines. It also complements dishes with earthy flavours, such as roasted mushrooms or truffle-based pasta.
Cellaring: This wine is ready to drink now, but its complex character will continue to evolve with further cellaring. With careful storage, it can develop additional layers of depth and richness over time.
Interesting Fact: Palo Cortado is often referred to as the “phantom” Sherry, as it begins its life as a Fino or Amontillado but undergoes an unpredictable transformation during aging, resulting in its unique profile that blends the elegance of Fino with the richness of Oloroso.
