Lustau Don Nuño is a classic dry Oloroso, made from 100% Palomino grapes grown in the chalky albariza soils of Jerez. The wine is aged oxidatively in old American oak casks for many years using the traditional solera system, without the protective flor layer found in Fino or Amontillado. This extended oxygen contact develops deep colour, complexity and a distinctive nutty character with a savoury backbone.
Bouquet Rich and intense with aromas of walnut, dried fig, orange peel and cedar. Hints of leather, toffee and smoky spice provide a warming, evolved bouquet.
Palate Full-bodied and dry with a velvety texture. Layers of roasted nuts, dark toffee, dried fruit and aged wood unfold with balanced acidity and a persistent, savoury finish. Complex and contemplative with rancio character.
Food Pairing A stunning match for hard cheeses, charcuterie, grilled mushrooms, or rich game dishes. Also pairs beautifully with consommé, spiced nuts or duck liver pâté.
