Matured in a combination of ex-bourbon, sherry, and STR (shaved, toasted, re-charred) red wine casks, this expression is non-chill filtered and bottled at 46% to showcase the depth and elegance of its heritage-driven style. Bouquet Warm and aromatic with notes of honey, baked apple, raisin, and subtle spice. Hints of toffee, dried fig, and herbal malt emerge with time in the glass.
Palate Smooth, layered, and gently warming. Flavours of spiced fruit cake, vanilla cream, and roasted nuts glide into hints of dark berries and malted barley. A soft oak backbone and gentle spice round out the long, elegant finish.
Food Pairing Pairs beautifully with roast pork, nutty cheeses, or fig and walnut tart. Also lovely with fruitcake, crème brûlée, or simply sipped slowly on its own.
