A juicy, savoury plush tomato note emerges, culminating in a classic Stellenbosch Cabernet with a lengthy, dry finish. Fermented in open-top concrete fermenters at an optimal temperature of 28°C, our wine undergoes a precise process, with the floating skins meticulously punched down every two hours during fermentation to extract maximum flavour. After 5-6 days, the juice is delicately drawn off the skins, resulting in a wine of exceptional depth and character. Following malolactic fermentation, the wine matures for 12 months in older 225L French oak barrels, allowing for subtle nuances of oak spice to complement the rich fruit profile. Upon pouring, the nose is greeted with enticing aromas of fresh juicy blackcurrant, black plums, and black cherries, with underlying hints of bouquet garni adding further complexity. The finely textured tannins provide a sturdy framework to support the plush fruit core, leading to concentrated flavours of blackberries and black fruit on the palate.
