Winemaking Eligo is the flagship Shiraz from John Duval, the former Penfolds Grange winemaker turned independent master. Sourced from exceptional low-yielding vineyards in the Barossa and Eden Valleys, the fruit was hand-selected, fermented in small batches, and matured for 18 months in a mix of new and seasoned French oak. The 2019 vintage, shaped by a low-yielding season, delivers exceptional depth, purity, and polish.
Bouquet Aromas of blackberry, dark plum, and blueberry leap from the glass, followed by notes of clove, liquorice, violet, and a hint of smoky charcuterie. Rich and multi-layered, the nose is as elegant as it is intense.
Palate Full-bodied and powerful, yet remarkably composed. Waves of dark fruit and spice unfold with plush tannins and subtle oak, finishing long and savoury. A fine thread of acidity keeps the wine fresh and focused, adding lift to its concentrated core.
Food Pairing Superb with grilled ribeye, rosemary lamb, duck confit, or rich vegetarian dishes like mushroom stroganoff. Aged cheddar or hard sheep’s cheese also make excellent companions.
Cellaring While expressive in its youth with decanting, Eligo is a serious cellar candidate. Enjoy now or hold for 10–15+ years to unlock its full complexity and finesse.
Interesting Fact “Eligo” means “to select” in Latin—a nod to the careful fruit selection and John Duval’s pursuit of excellence. This wine is crafted only in standout vintages and represents the pinnacle of his work under his own label.
