Distillation & Maturation The Hearach (Scottish Gaelic for “a native of Harris”) is the first-ever single malt whisky from the Isle of Harris Distillery in the Outer Hebrides. Made using Scottish barley, soft Hebridean water and slow, traditional distillation, it is matured in a mix of first-fill bourbon, Oloroso and Fino sherry casks. Bottled at 46%, natural colour and non-chill filtered, this inaugural release reflects the rugged beauty and maritime soul of its island home.
Nose Elegant and expressive, with aromas of honeycomb, dried apple, vanilla and sea breeze. Hints of toasted hazelnut, wildflower and soft spice linger beneath.
Palate Silky and well-balanced, the palate shows soft orchard fruit, heather honey, warm spice and a whisper of coastal saltiness. Layers of oak, barley sugar and light malt lead into a clean, gently spiced finish with a touch of island warmth.
Food Pairing Pairs beautifully with scallops, soft cheeses or lemon-roasted chicken. Also a lovely match for apple tart, oatcakes or smoked salmon.
