Hebe, the Greek Goddess of Youth and daughter of Hera and Zeus, is blessed with one of the most powerful abilities in mythology—the power to restore a sense of youth.
Hebe "Red" is an organically crafted, naturally made wine, made from handpicked Pinot Noir grapes. It reflects the unique terroir of the Southern Valley Vineyard and adheres to the principles of natural winemaking—nothing added, nothing taken away. With 10% whole cluster wild ferment using indigenous yeasts from the vineyard, and gentle hand plunging, the wine is a pure expression of its environment. After fermentation and maceration on skins, it was pressed into Puncheon and barrique, where it completed its malolactic fermentation, then settled before being racked into tank for bottling in late August. Unfiltered and unfined, all yeast and bacteria come from the grapes, with fining coming naturally from the wine's time spent on discarded yeast cells in barrel.
