A voluptuous interpretation of Pinot Gris, Greywacke botrytis Pinot Gris conjures visions of roasted apricots, cumquat marmalade atop toasted brioche, and white chocolate nougat. On the palate, a luscious journey unfolds, adorned with dried fruits, dates, and the golden sweetness of wildflower honey. Crafted from shrivelled grapes, the winemaking process begins with a very long, low maceration press cycle. Following cold-settling, the juice is divided, with half undergoing fermentation in old French oak barriques with indigenous yeast, while the remainder ferments in stainless steel using cultured yeast. By September, the fermentations have ceased, leaving behind an average residual sugar of 130g/l, encapsulating the essence of indulgence in every sip. With its great concentration and deliciously crisp, persistent finish, this wine embodies the pinnacle of sweetness.
