From organic, limestone-rich vineyards on the Omihi slopes of the Waipara Valley, Greystone Pinot Gris 2023 is a wine of site and texture. Hand-harvested and fermented with wild yeasts, a portion of the wine is aged in old oak barrels and left on lees to build complexity and richness. The result is a dry, structured, and thoughtfully layered expression of Pinot Gris that reflects Greystone’s natural winemaking philosophy.
Bouquet
Lifted and aromatic, the nose shows ripe pear, golden apple, and white peach, with layers of ginger, orange blossom, and subtle almond. A mineral core runs through, adding poise and a sense of place.
Palate
Textural and dry, with depth and focus. Juicy stone fruit and baked pear lead into creamy lees texture and savoury spice, balanced by lively acidity and a chalky edge. The finish is long, clean, and quietly complex—more Alsace than Marlborough, in all the best ways.
Food Pairing
Ideal with pork loin and apple compote, miso-glazed eggplant, or creamy mushroom dishes. Also a lovely match with soft cheeses or roast cauliflower with hazelnuts.
Cellaring
Drinking beautifully now for its freshness and depth, but can cellar for 5–6 years, developing richer nutty, honeyed layers and added savoury nuance while retaining its mineral backbone.
