Winemaking Grown on limestone-rich soils in Waipara Valley, Greystone’s Organic Chardonnay is made with minimal intervention and certified organic practices. The 2022 vintage was hand-picked, whole-bunch pressed and fermented with wild yeasts in French oak barriques (25% new). The wine was aged on full lees for 12 months with bâtonnage, building depth, structure and texture. Full malolactic fermentation enhances mouthfeel, while natural acidity preserves balance and drive.
Bouquet The nose is vibrant and refined, with aromas of lemon curd, white peach and sea spray. Subtle layers of hazelnut, flint and fine oak spice bring complexity and savoury charm.
Palate Creamy, mineral and inviting, the palate delivers ripe stone fruit, citrus zest and a hint of toasted almond. The texture is silky and full, balanced by bright acidity and a long, focused finish. Elegant and energetic, with both power and finesse.
Food Pairing Excellent with lemon roast chicken, scallops in beurre blanc, or creamy seafood pasta. Also lovely with grilled asparagus, goat cheese tart or mushroom risotto.
Cellaring Delicious now, but will evolve through 2032. Expect deeper savoury tones, layered complexity and refined texture with age.
Interesting Fact Greystone’s vineyard is fully certified organic and farmed using regenerative practices, with wild fermentation carried out outdoors in the vineyard—bringing the wine even closer to its origin.
