Before Greystone came into existence, the estate in Omihi was primarily a sheep farm, like much of New Zealand. However, hidden beneath the paddocks lay the secret to exceptional winemaking. Limestone bedrock, thrust upwards through tectonic activity, created a rare and invaluable asset for viticulture. This geological feature, reminiscent of regions like Burgundy, France, particularly revered for its Chardonnay, set Greystone apart.
This Greystone Chardonnay is the result of careful selection from two distinct blocks. One, predominantly limestone, imparts elegance, purity, and complexity to the wine, lending it finesse. The other block, with its clay-based soils, contributes breadth and texture, enriching the blend. The marriage of these elements creates a harmonious, balanced wine that reflects the unique terroir of the estate.
Under the stewardship of Don Maxwell and his team, Greystone stands as a flagship estate in Waipara, committed to showcasing each vintage as a true reflection of the site and its character.
The wet spring of 2022 reduced yields, setting the stage for a long, dry summer that ensured pristine fruit with vibrant acidity. As autumn unfolded, even ripening enriched the flavors, evident in the wine's remarkable concentration. Hand-picked at dawn to preserve freshness, each block underwent natural fermentation in French oak barriques, contributing nuanced complexity. After 10 months of careful aging, the result is a Chardonnay of finesse, weight, and purity, reflecting the essence of Waipara Valley's North Canterbury terroir.
