Gonzalez Byass Elegante Medium NV

Elegante Medium is a blended sherry made from Palomino Fino and a small portion of Pedro Ximénez, aged using the traditional solera system in Jerez. After fermentation, the Palomino component is aged oxidatively, while the PX adds natural sweetness and depth. The final blend is lightly sweetened to produce a smooth, approachable style with soft texture and mellow character.

Bouquet
Gently aromatic with notes of toasted almond, caramel, dried fig and vanilla. Hints of warm spice, walnut and orange peel add inviting complexity.

Palate
Off-dry and supple, with flavours of baked apple, hazelnut, toffee and sultana. The sweetness is well balanced by soft acidity, leading to a mellow, rounded finish.

Food Pairing
Lovely with pâté, roast chicken, pumpkin soup or nutty cheeses. Also pairs beautifully with fruitcake, sticky toffee pudding or as an after-dinner sip.

Cellaring
Ready to enjoy on release. Once opened, store sealed in the fridge and consume within 2–3 weeks for best freshness.
