Del Duque is a certified VORS (Very Old Rare Sherry), with every drop aged for a minimum of 30 years in solera at González Byass’s historic cellars in Jerez. It begins life as a Fino under flor before evolving through decades of oxidative ageing, creating a sherry of exceptional concentration, complexity, and finesse. Produced in tiny quantities, it is one of the most prestigious Amontillados in Spain.
Bouquet Profound and aromatic, with layers of roasted hazelnuts, orange peel, aged wood, and dried chamomile. Notes of antique furniture, sea breeze, and baking spice rise with each swirl.
Palate Bone-dry, intense, and full of character. Flavours of toasted almond, dried fig, saline mineral, and a whisper of toffee glide across a taut, structured frame. Bright acidity brings balance and lift, with a lingering, savoury finish that resonates for minutes.
Food Pairing Serve slightly chilled with aged Manchego, Jamón Ibérico, grilled mushrooms, or consommé. Also beautiful alongside artichokes, smoked fish, or savoury tapas.
Cellaring Del Duque is fully mature on release and highly stable. Once opened, it will remain vibrant for 4–6 weeks when stored sealed and cool.
