González Byass Apostoles Palo Cortado VORS is a rare and exceptional sherry from Jerez, Spain, aged for over 30 years and certified VORS (Very Old Rare Sherry). This singular wine begins its life as a Palo Cortado, a hybrid style that combines the delicate nose of an Amontillado with the richness and body of an Oloroso. What makes Apostoles unique is the inclusion of a small portion of Pedro Ximénez (PX), which adds a subtle sweetness and extra depth. The wine is aged in a solera system of American oak casks in the historic González Byass cellars.
Bouquet Complex and intense, with aromas of roasted hazelnuts, dried fig, orange peel, antique wood, and balsamic spice. Subtle hints of toffee, polished leather, and PX-infused raisin sweetness emerge with time in the glass.
Palate Rich, dry, and deeply layered. The palate opens with toasted nuts, dried fruit, and aged citrus, wrapped in a silky texture. The PX component adds just a whisper of sweetness to balance the wine’s salty, oxidative edge. It finishes with extraordinary length—nutty, savoury, and slightly smoky.
Food Pairing Pair with Jamón Ibérico, aged cheeses, duck liver pâté, or savoury dishes with balsamic glaze. Also outstanding with grilled mushrooms, rich game meats, or even a small bite of dark chocolate with sea salt. Serve slightly chilled.
Cellaring Fully mature on release and highly stable in bottle. Once opened, enjoy within 4–6 weeks when stored sealed and cool. Unopened, it can cellar gracefully for many years.
Interesting Fact The Apostoles solera was established in 1862 to commemorate a visit from Queen Isabella II of Spain. The wine continues to honour this royal legacy, offering a regal experience in every glass.
