Tio Pepe is one of the world’s most iconic Fino sherries, produced from 100% Palomino grapes grown in the chalky albariza soils of Jerez. After fermentation, the wine is fortified and aged for an average of five years under a natural layer of flor yeast in the traditional solera system. This unique ageing process protects the wine from oxygen and creates the distinct freshness, salinity and savoury tang that define Fino.
Bouquet Bright and delicate, with aromas of green apple, fresh almond, lemon peel and bread dough. Hints of flor yeast and crushed seashell lift the nose.
Palate Bone dry and refreshing with a fine, chalky texture. Flavours of salted almond, citrus, sourdough and chamomile are carried by racy acidity and a clean, briny finish. Crisp, elegant and deeply savoury.
Food Pairing Perfect with tapas, olives, anchovies, Iberico ham, marcona almonds or grilled white fish. Serve well chilled as a classic aperitif or with sushi and seafood.
