Cuatro Palmas is the rarest and most mature expression in González Byass’ legendary "Palmas" collection, showcasing old finos that defy time. The 2020 release comes from a single cask of Tío Pepe Fino that has aged undisturbed for over 52 years in the solera system at the historic González Byass bodega in Jerez. Over time, the flor (yeast layer) disappears, transitioning the wine toward Amontillado, yet Cuatro Palmas retains the soul and structure of an old Fino. Bottled in extreme rarity—only 500 bottles—this is a sherry of monumental depth and precision.
Bouquet Hauntingly complex. Aromas of antique wood, dried herbs, curry leaf, iodine, walnut shell, and chamomile mingle with sea breeze salinity. Subtle oxidative notes of almond skin, orange oil, and aged leather create a deeply layered aromatic profile.
Palate Bone dry and electric, with razor-sharp acidity. Flavours of salted almond, green olive, dried lemon peel, and savoury spice unfold in slow, elegant succession. The wine is incredibly concentrated yet weightless, finishing with staggering length and a saline, nutty echo. A masterclass in balance, age, and terroir.
Food Pairing A meditative wine to savour on its own, though it also pairs beautifully with high-end tapas—almonds, anchovies, Jamón Ibérico, or sea urchin. Also stunning with umami-rich dishes like shiitake broth or aged Comté.
Cellaring Already aged to perfection, this wine is stable in bottle and can be enjoyed now or cellared further for curiosity’s sake. Once opened, enjoy within 1–2 weeks when stored cool and sealed.
