Elephant Hill Merlot 2018 is crafted from meticulously selected fruit grown in the warm, stony soils of Hawke’s Bay’s famed Gimblett Gravels and Te Awanga vineyards. Hand-harvested, traditionally vinified, and matured in French oak, this Merlot captures the perfect balance between power and grace that the region is celebrated for.
Bouquet Elegant and expressive with aromas of ripe plum, black cherry, mocha, and a hint of cedar and dried herbs.
Palate Medium to full-bodied with silky dark fruits, fine-grained tannins, subtle oak spice, and a long, flowing finish. Refined, plush and beautifully poised.
Food Pairing Perfect with roasted lamb shoulder, mushroom stroganoff, beef and red wine pie, or a rich aubergine parmigiana. Also lovely with aged Gouda.
Cellaring Drinking beautifully now but will continue to evolve gracefully through to 2028, gaining savoury depth and richness.
